All my free time seems to be spent sewing, decorating, organizing and just thinking about how in approximately 3 weeks my life is about to change forever. It's kind of a big deal, yes? I guess that's why there isn't much room in there for much else. So please bear with me with all the baby talk, baby items and general lack of variety on this here blog. I'm doing my best to show restraint and not show you every cute baby item I come across (though I'm still going to show you some ;)
Luckily, I've still got room up in that ol' noggin for food... babies and food. This time of year I always get a craving for pumpkin. I came home from the grocery store with 3 cans today. I'm on the hunt for a new fall pumpkin recipe and in the meantime I think I'll be revisiting these Pumpkin Chocolate Chip Cookies ASAP.

oh I'll have to try a recipe for those cookies! Baby brain only gets worse- I hate to tell ya. I have a three month old and keep thinking one day I will wake up and have my memory back!

ReplyDelete3 weeks? Where did the time go?
We have 5 weeks...but we are going to start trying (naturally, with the midwife) in 1.5 weeks. We don't want to miss the deadline by too many days since its VBAC and late baby = cesarean.
I am hustling this morning to get my son's Halloween costume built. Because 1.5 weeks? That is TOO SOON!
I get the whole "occupied mind" thing...even on babies. I'm not pregnant, what's my excuse? (And yes, I'm totally done having babies. Though I've had a very fleeting thought of a 4th...more than once. Then I say "hello" to reality again. Ha!)

You need to stop posting food pictures. My lunch is not ready and it's just not nice. (But they looooook so nice. Yum.)

Pumpkin Pie Cheesecake wuth gingersnap crust
Ginger Snap Crust
1/2 cup butter
3/4 cup sugar
1/4 cup molasses
1 egg
2 cups flour
1tsp baking soda
1tsp ground ginger
3/4 tsp ground cloves
3/4 tsp cinnamon
pinch of salt
Preheat oven to 350. Cream butter. Add sugar and molasses. Scrape bowl. Add egg, baking soda, ginger, cloves, cinnamon and salt. Add flour until combined. Line cookie sheet with parchment paper. Shape about 1tbsp of dough into a ball, place on cookie sheet about 3" apart. Press lightly with fingers to flatten. Bake for 10-12 mins. Cookies should be left overnight to dry out.
Cheesecake:
12oz softened cream cheese
1/4 cup sugar
3/4 cup whipping cream
1/2 cup sour cream
1 egg
1 egg yolk
1 tsp vanilla
1 1/4 cup pumpkin puree
1/3 cup brown sugar
1 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp ground cloves
Directions:
Once cookies are dried out, process into crumbs.
Preheat oven to 350. Ccombine gingersnap crumbs with 1/3 cup melted butter. Press into bottom of 8-10" springform pan. Bake 10 mins to set crust. Set aside to cool
Adjust oven temp to 250
In a large mixing bowl, beat cream chesse until smooth. Scrape bowl. Add sugar, whipping cream and sour cream. Beat well and scrape bpwl.Add egg, egg yolk, and vanilla. Scrape bowl. Mixture should be very smooth at this point. Add pumpkin puree, brown sugar and spices just until combined.
Pour cheesecake batter over ginger snap crust. Place in oven at 250 and bake for 1.5-2 hours. Cheesecake is done when the centre is set but still has a slight jiggle and when the edge of the cake begins to pull away fromt the sides of the pan. Allow cheese cake to cool to room temperature before placing in the fridge.

ReplyDeleteYou are entitled to be preoccupied with babies. Enjoy the time! I made those cookies recently and substituted applesauce for the oil as per a reader suggestion. They ended up being like little cakes which I thought was great but my kids didn't groove on.
