Baked Cinnamon Sugar Tortilla Chips

Holy man am I having a hard time getting back into blogging since vacation. That beach sure does wonders for one's soul but not so much for the productivity.

In addition to being a slacker, I've also been having some serious food withdrawals. Those all inclusive resorts sure do keep you well fed! One of my favourite eats while in Mexico was the deep fried cinnamon sugar tortillas. This deep fried sugary bit of goodness was my breakfast staple. Yep, breakfast. 'Breakfast dessert' I called it (hey, I was on vacation).

I decided to whip up an easy, baked, semi-healthy "slacker" version the other day to satisfy my craving.

I can't say I exactly have a recipe for this (I'm sure there are tons if you google it), really I just made this one up as I went along:

cinnamon-tortillas-ingredients

Ingredients:
- tortillas
- olive oil or melted butter
- 1/4 cup sugar
- 1-2 teaspoons cinnamon
(adjust to as little or as much cinnamon/sugar tastes good)

Literally you just slather tortillas in some butter, sprinkle with cinnamon and sugar and bake at 350 until golden. About 8-10 minutes, keep an eye on them so they don't burn.

That's it, enjoy!

I'm not going to lie, the deep fried version is better, but for a healthy, easy alternative these hit the spot. If you're looking for more authentic options check out this recipe.

Bonus points: you can make this for Cinco de Mayo this weekend!

p.s. also looking for delicious guacamole recipes for my mexican withdrawals, got any good ones? My pal, Dajana, whipped up this delicious mexican meal the other day that I'll promptly be getting my hands on.

Also, came across these margarita cupcakes via freutcake this morning!

Mmm, you hungry yet?

p.p.s coincidentally, after posting this I came across this amazing fruit salsa recipe that would be sooo good with these! Thanks, Sarah!

  1. I had the same problem when I returned from Europe this winter. Still haven't recovered! Go easy on yourself...it happens to all of us ;)

Mmm....I love this recipe! Definitely trying it out.
And, my favourite guac recipe to date was simply mashed avocados, a pinch of salt and I think a splash of lemon juice. So good!
